Actually I love everything about Christmas and am so excited that it is that time of year again.
With Christmas comes the New Year and that makes me even more excited. For many years I never believed in celebrating the New Year in… probably because I have never been able to stay awake long enough to see it in. But that has all changed. New Years represents an opportunity to celebrate what we have experienced, accomplished, enjoyed, endured, survived and lived in that year. It gives us a chance to say good bye to the old and welcome in the New. New opportunities, new experiences, new beginnings and a new year. It is important that we celebrate milestones in our lives and making it through another year is definitely a milestone… otherwise it is just another day.
This year on December 31st I will open my gratitude jar and read through the moments of 2013 that have made me grateful. I’m not normally a journal keeper or regular note taker, but everyday this year I have written a grateful moment down. Life is about the moments, some will be good, some will be not so good, some will tough and some will take your breath away. So if you get the chance to spend this New Years Eve with those that have helped make your year it has been than take it with both hands and enjoy the chance to say thank you and good bye to 2013 and welcome 2014- I know I will be spending it with the people who make my moments and take my breath away.

Wok Tossed Calamari and Broccolini
2 garlic cloves, crushed
1/2 bunch coriander, roots chopped and leaves reserved
1 long red chilli, deseeded and chopped
2 tbs sugar
2 tbs fish sauce
1/4 cup lime juice, or to taste
8 cherry tomatoes, coarsely chopped
2 shallots, sliced
600g squid tubes or cooked prawns
2 bunches broccolini, cut into short lengths

I would like to thank everyone who allowed me the privilege of being involved in their health and wellness journey this year. We have trained hard, laughed loud, improved our food choices, worked as a team, dobbed a little, encouraged a lot, made and cemented some fabulous friendships and realised that we are a team… Team Enrich and are there for each other.
