I am looking forward to getting away with the family to a wonderful part of Australia soon. We are heading out to Kakadu and I will endeavour to blog my trip...I know shut the front door Trish is becoming IT savy...With so many wonderful places to go and see I am getting a bit exicted. Which lead me to thinking about how we find our happiness and if we have lost it how do we get it back?. Read on to find your joy.

Are you missing the Happy in Happiness-
If I was to ask you "want do you want in life"? Research shows that most of us answer "to be happy"...So are you? If the answer is no, then read on and find 10 simple ways to put the smile back on your dile and the bounce back in your step.
1. Practice mindfulness.
Be present and in the moment. Don't think about what you have to do tomorrow or what you didn't do yesterday. We don't ever get this moment again, so breathe and enjoy it.
2. Laugh out loud.
Laughter is the best medicine. Read more below about how laughter can improve your health.
3. Go to sleep. In our 'to busy' to sleep world we are becoming sleep deprived. You can't bank sleep or save it up for a rainy day. Lack of sleep is connected with lowered mood, reduced immune function, higher stress levels and increased dysfunction.
Clean work space, house or life equals a clean better functioning mind which equals a happier more organised more time efficient you....clutter breeds negativity- so sweep out the cobwebs!!
5. Make a list
Prioritise your time. What must get done and what you would like to get done. Review your todo list at night so you are ready for tomorrow. Include time for you, your family, your exercise and laughter
6. Do one thing at a time
Complete one job at a time. Research has shown that when we try to multitask ourselves to the max our stress levels are higher and our productivity lower.
Turn up the music and sing like no-one can hear you. Studies find music activates parts of the brain that produce happiness — the same parts activated by food and sex. It’s also relaxing...LA LA LA......
8. Exercise or walk the dog
exercise is better than drugs for relieving anxiety and stress. It is even more effective when you put your mind to use at the same time..mindfully walking and focusing on the breathe can improve your outlook, reduce your stress and make you happier. Add a pet to the equation and the benefits are out of this world!!- So get your shoes on, grab your favourite 4 legged friend and hit the streets!!
9. Turn off the News
Just dont watch it or listen to it or read about it. Give your self a break from the world and it's problems and focus on your life and your family. Keep a journal, meditate, exercise or just relax when you normally watch, read or listen to world events.
10. Count your blessings
People who pause each day to reflect on some positive aspect of their lives
(their health, friends, family, freedom, education, etc.) experience a heightened sense of well-being.

Laughter reallly is the best medicine....and here is why!!!
Research shows that even the anticipation of laughter increases the
release of our feel good hormones by a whopping 30%. Laughing also burns
calories so a good 10-15 minute laugh can burn 50 calories. But thats not all
laughter is good for. It is also beneficial for our immune system. The more we giggle the more we produce antibodies and the more we fight off disease. A laugh a day keeps the heart doctor away. Laughing is good for our heart function (Psychologist William Fry 1979 showed that when you laugh for 20
seconds it has the same impact on your heart as working out on a rowing machine
for 3 minutes!!!!) It aids diabetes prevention (emotions such as anger, sadness
and fear have been shown to elevate blood glucose levels, where as laughter and happiness reduces them.
Laughter is good for our mood which is then good for our anxiety levels as it increases our endorphins and decreases our stress. These same endorphins help with pain relief and are as effective as the good old fashioned drugs we turn to.
It is also good for our love life...we rate humour high on our list of characterisitcs that we want potential partners to have... We love funny people!!
So laughter is like a health tonic. If we willing take our tonic everyday and don't skip a dose then prescription medication will be less needed our health system less burdened, we become our own health practitioner and souls become lighter...not to mention our waistlines :-)

Tofu and Eggplant Massaman Curry
2 teaspoons peanut oil
400ml can of light coconut milk
¾ cup vegetable stock
4 baby eggplants (240 grams) sliced thickly or
large eggplant roughly diced
3 medium potatoes, chopped coarsely ( these are optional)
200grams firm tofu sliced thickly
1 tablespoon lime juice
¼ cup loosely packed fresh coriander leaves
Massaman Curry Paste
2 teaspoons ground coriander
½ teaspoon ground cumin
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cardamom
2 fresh long red chillies, chopped coarsely
3 shallots coarsely chopped
10cm long stick finely chopped fresh lemon grass
4 coriander roots
1 tablespoon cashews
2 tablespoons water
1. Make massamun curry paste
2. Heat oil in large saucepan; cook curry paste, stirring until
