So with only 40 days before we can open our gratitude jar, how is yours going? Each year we can recall why we can’t wait for the New Year to start but with so many wonderful things that occur in our lives it is a wonderful opportunity to recount them. I am definitely looking forward to sitting down with a cup of coffee and scattering my wonderful year out in front of me and reading through my 365 grateful moments.
So this newsletter sees us introduce and welcome Abi into the Enriched Family and into the Gumdale area. Abi is the owner of Butterfly yoga and is running Mums & Bubs classes. We wish her well and thank her for bringing her yoga to a new generation.
We have a power chat on sleeping and why we shouldn’t skimp on it and we learn that the most dangerous day for accidents is the Friday before Christmas. We also then about some of the most crazy Christmas accidents that have landed people in hospital over this festive season. Christmas cocktails can blow the calorie budget that you have been sticking somewhat to all year so I have put together a few low-cal options that you can try this season. This months’ recipe is my current fav and I have borrowed it from Donna Hay with a few changes. It is quick easy healthy and simply delish so make sure you give it a go.
As we rush into Christmas and the necessary Christmas gift hunting remember why we are giving our loved ones gifts- even if you put religion to the side for a moment and think about this joyous occasion to spend time with the ones we love. Take a deep breath as you enter the carpark looking for the empty space, take a deep breath as you move through the crowded shopping centres trying to decide what to get. The most ordinary day for some is the most ordinary day for others. Smile, relax and leave it to the universe. You will enjoy the experience a lot more. Skimping on Sleep –It’s time to get caught napping
Every wondered what some of the long term effects of inadequate sleep are? Not only will you feel sluggish and lethargic but continue with reduced sleep long enough and it will become a contributing factor in some major dysfunctions including;
Now that I have your attention, Christmas is fast approaching and that means Christmas Parties are probably underway. Between the alcohol and the nibblies it can spell out disaster to your usual healthy nut attitude. So here are a few lower calorie drink options that Yule tide over… get it..thats a cracker!!! Lol- I would hate to be the Christmas Drink Grinch after all J
Vodka and Soda- This one comes in at 70 calories and is definitely the most low cal drink…but it is also a little boring and may put you to sleep so here are a few other options to keep you on the healthy end of merry this Christmas.
Pina Colada Cooler
With a TWIST- the original Pina Colada packs a punch at 230 calories per cocktail- if you were to make this at home we can drop it down to 165 –
Recipe for low Cal Pina Colada
45ml coconut-flavored rum
90 ml pineapple juice
120 ml sparkling water
1 tablespoon of Coconut cream light
Mix together and pour over ice – Don’t forget your plastic monkey and umbrella
Sangria Sparkler- Sharing is caring- Prep: 10 minutes Chill: 2 hours Makes: 12 servings- 100 calories per serve
1 cup light orange juice
1/4 cup brandy or cognac
1/4 cup orange liqueur
2 tablespoons sugar
2 medium oranges, sliced
2 cups club soda, chilled
Crushed ice and/or orange peel curls (optional)
1. In a large pitcher, combine wine, orange juice, brandy, orange liqueur, sugar, and orange slices. Chill at least 2 hours. Add club soda before serving. Serve over crushed ice and/or with orange peel curls, if desired.
Prep: 20 minutes Chill: 1 hour Makes: 8 servings Calories- 95 per serve
2 large limes, cut into pieces (reserve one piece)
2 cups water
2/3 cup sugar
2 cups water
1/4 to 1/2 cup light rum
1/2 cup fresh mint leaves
Quartered limes and/or mint leaves (optional)
1. In a blender combine lime pieces, 2 cups water, and 2/3 cup sugar. Cover and blend about 30 seconds or until limes are chopped; do not puree. Strain through a sieve into a large pitcher. Mix in 2 cups additional water. Cover and chill for 1 to 12 hours.
2. Stir rum into lime mixture. Moisten the rims of 8 glasses with the reserved lime piece; dip rims in sugar. Divide mint among glasses. Use a wooden spoon to press mint into the bottom of each glass; press firmly to release flavor. Fill glasses with ice cubes. Pour chilled lime mixture over ice and mint leaves. If desired, add extra quartered limes and/or mint leaves.

Mums & bubs yoga- butterfly yoga
A wonderful New Yoga class for Mum’s and Bubs has started up in the Gumdale Area. Abi Chambers is the Principal Teacher at Butterfly yoga.
"At Butterfly Yoga our goal is to create a space for mums to be, new mums, mums with little ones and kids (aged 3-5), to enjoy the huge benefits of yoga. Whether preparing physically, mentally and emotionally for the beautiful process of childbirth and motherhood in our pregnancy yoga classes, or after the birth taking some time out to focus on your postpartum body in our Mums & Bubs, Mums & Active Bubs and Mums & Toddler yoga classes, our classes promote strength, flexibility, breath and body awareness.
Our Kids yoga classes for 3-5 year olds are equally just as awesome. Physically, yoga enhances children's flexibility, strength, coordination, and body awareness. In addition, their concentration and sense of calmness and relaxation improves. So whether a beginner or advanced come along and join us on the mat at Due East on Monday & Friday mornings, or the Gumdale Progress Hall on Tuesdays, Thursdays and Sunday.

Recipe of the Month
Chilli, Pepper and Basil Tofu (or beef) Stirfry
*Original recipe from Donna Hay
What you need:
1 tablespoon vegetable oil
750 gram firm tofu, drained and chopped OR 500 grams of lean beef cut into strips
2 large red chillies, sliced
4 cloves of garlic sliced
1 tablespoon grated fresh ginger
1 tsp cracked pepper
200 grams of pac choy trimmed and halved
3 stems of brocollini roughly chopped
¼ cup light soy sauce
¾ cup vegetable stock
1 cup fresh basil leaves
Bean sprouts to serve
Cooked vermicelli rice noodles to serve
